It looks nice and considering trying it, but do you think the filling can cook through properly in 2 minutes on each side?

Yes, I would say so. I'd make sure the filling is at room temperature to start with.

Good shout - I can imagine the sesame seeds burning before the filling cooks so room temperature would help a lot.
