Pasta recipes for DH who doesn't like pasta

I love pasta. DH is not keen. He will eat bolognese, lasagne and pesto pasta but is not keen on any kind of creamy pasta or a traditional tomato recipe.

I don't make pasta often because he doesn't like it.

Do you have any pasta recipes that even a someone who is not a lover of pasta will eat?

Truthfully I just wouldn't bother - DH doesn't like pasta dishes, He makes a sauce, does rice with his and pasta with mine

Sounds like that works for you but it's the sauces my DH isn't keen on

If it's the sauces your dh isn't keen on then I suppose he could think about ways he might enjoy pasta, if at all. It is not your job to do this. He is a grown up.

We sometimes have tagliatelle as a side (like potatoes) dressed with a bit of butter, garlic, and herbs. It works as a good BBQ side, but no reason why grilled/roasted meat wouldn't be equally as good.

One of my favourite pasta dishes at the moment is an Ottolenghi recipe with orzo, prawns and marinated feta (it can be Googled). It is tomato-y, but the orange and fennel seeds make it totally different to an Italian tomato sauce.

Have you tried fresh pasta rather than dried, or buying higher quality dries pasta? I thought I didn't like pasta but it was cheap dried pasta, often cooked to a starchy mush I wasn't keen on! I am still not the world's greatest fan, but it's much nicer when it's done properly.

I quite like it plain with butter and salt and black pepper. More of a snack than a meal, though.

I also liked a Jamie Oliver one which involved garlicky breadcrumbs to give it a bit of a different texture. I don't have a clue what to search for so can't give a link.

Jamie Oliver has an amazing recipe for pasta with parsnips and bacon, it sounds really wrong but it's amazing. It's not a creamy or tomatoey sauce. He also does a sausage pasta which is good.

Nigella orzo with bacon and peas is a regular in our house. Not creamy or tomatoey. One of the only things enjoyed by everyone. I found out, when I ran out of orzo in lockdown, that it works with any sort of pasta.

I use gammon I don’t eat meat, but the dc love it. I do a veggie version with dried porcini mushrooms.

I use pancetta but make sure I really cook it down until all the fat has melted. I too hate the fatty, chewy bits on bacon.

Out of interest, does your DH like soup OP? Quite often soups such as Minestrone contain small pieces of pasta, does he mind eating it that way?

I'm like your DH and don't really enjoy many pasta sauces particularly creamy or tomatoey ones I find them quite boring as I love my food with a kick , ones I do like however have been creamy cajun chicken, jalapeño popper pasta with breaded chicken, spicy nduja sausage, taco spaghetti. I also love just spaghetti with spinach, lemon juice, garlic, butter and chilli flakes.

Thank you very much for all the bacon-substitution ideas! Yes, pancetta and chorizo both sound safer from chewy bits, and gammon is a great idea - I'd competely forgotten about it - I think that would work really well.
