Butternut squash inspiration!

I usually roast it as a side dish, but I was wondering if anyone had any other inspiration/tried and tested recipes.

Lovely risotto - add chilli flakes, then crumble feta on top.

Great added to casseroles - I do a sausage casserole with good sausages, peppers, onions and BNS.

Good in curries too, either with meat or with chickpeas, lentils etc.

Oh and soup.

Those are the main uses here.

I roast it or use in casseroles, tray bakes etc.

Also can be used in baking as a substitute for pumpkin purée. I make pumpkin brownies, pumpkin snickerdoodles. You could use it to make pumpkin pie but may need to thicken up the purée.

Tagine - a couple of onions, some nice tagine spices, tin of tomatoes.

Thai curry risotto - sounds wrong, but a good spoon of yellow thai paste in the risotto (before the stock) and then add roasted cubes of BNS when the rice is almost cooked.

Curry with spinach and chickpeas - it's a great meat replacement in a curry because it holds its shape and texture well.

Google 'gousto cookbook butternut squash' and there are loads of great (quick) recipes.

I've almost always got one in my cupboard, because it keeps so well, and means there's always something for an 'emergency' dinner. Like last night!

I love roasting squash and stirring it through risotto with some sage. Combined with other vegetables it is good in a stir fry or curry. Mashed up with potatoes to have with a roast. Blended up for mac and cheese is lovely too - really tasty comfort food.

We have butternut squash fajitas using a fajita kit. I roast the squash and add it to peppers onions and maybe black beans. Have it served with salad and potato / sweet potato wedges. Very popular in my house.

These are great suggestions! Going for risotto this time, but keeping the other ideas for another week because they sound delicious. Sausage casserole has got the kids interested!

Roasted butternut squash and feta tarts. Cube and roast your squash for about 20 mins before making up the tarts.
Ready rolled puff pastry, cover base with some nice red onion chutney, the roasted cubed squash, crumbled feta and some fresh thyme. Bake in oven for 30 mins.

I love butternut. Do many of these mentioned.

Thai butternut curry - red curry paste, coconut milk boiled off together, cubed butternut then topped with hot water. Cook. Add mange tout, a handful of chopped tomatoes (or halved cherry tomatoes). Cook for another 5 mins. Add fish sauce, lime juice, and a teaspoon of brown sugar.

Stuffed butternut is good too. Stuffed with spinach and ricotta works well.

Soup can be made 100 different ways with butternut.

And a substantial warm salad we have occasionally is roasted butternut (add a little cinnamon or cumin), then add to a bowl of fresh baby spinach, top with toasted pine nuts (or chopped toasted hazelnuts can work but less popular over here) and blue cheese (DH gets feta as he hates any kind of blue cheese). Dress with your preferred version of a lemon, mustard, honey dressing.

Ottolhenghi has quite a few ideas for butternut squash.

Additionally, I use it in Thai style coconut red curries, in soups with lots of ginger and red lentils, roasted with a white miso/sugar glaze, roasted with candied pecans (that is the American in me), as part of a filling in a veggie Wellington along with feta and mushroom.

This is a very nice butternut squash and chickpea curry recipe. I try to use the Coquina variety of butternut squash but any will do.

You could do worse than watch the first part of the final of Celebrity Home Cook on BBC iplayer. The finalists were presented with a butternut squash each to make into a meal. Quite educational I thought!

This sounds amazing!

Jamie Oliver has a nice stuffed quash recipe.

Roast butternut squash then mix with fried onions/peppers and a tin of black beans plus some baby spinach leaves, and use to stuff tortilla wraps. Cover in soured cream and cheese and bake until golden.

Chop and roast it with onions, peppers, mushrooms and whole garlic cloves, then stir into cooked pasta with parmesan and a big dollop of creme fraiche. Add whatever herbs you've got knocking around - a bit of sage is nice.
