Recipes please using courgettes?

Accidentally ordered 2kg of courgettes instead of 2 in this week's shopping 🙈

grate them and freeze in portion.
I add them to most pasta sauces or to cake mixture instead of carrots.

courgette and basil soup with parmesan.

We make Nigella’s courgette and chickpea filo pie all the time, it’s really nice.

To get rid of excess moisture, cut in half lengthwise & remove seeds with a teaspoon - that's where the unwanted water is.

I sometimes use them in place of aubergines - moussaka, bhaji etc.
