Thai green curry paste

I’ve got all the ingredients to make it from scratch apart from the lemongrass which I couldn’t get hold of.
Will it be rubbish without?

Personally, I think lemongrass is one of the major flavours of Thai food. I'd wait until you have some.

I know that’s what I thought.
I do have a jar of green curry paste, but seems a shame not to make fresh when I have all the other ingredients.

Used the lemon... worked out fine. Didn’t have the usual level of heat but was bloody delicious

I'm pleased it worked! I use it if I run out of lemongrass too.
