I love a really good broth with shredded chicken, carrots, leeks and celery- feels so good for the soul Grin

Nigella's minestrone. No tomatoes and no garlic in it (which is unusual for minestrone I think) but SO good. Basically you stew the onions, celery and carrot in a rather lot of olive oil and butter for ages before adding the stock and other vegetables which also cook for a good long time, then pasta and green beans or other greens for the last 10 minutes. Absolutely divine.

Mmm I like a good thick soup,leek,barley,carrots,onion.
Lentil always works and it’s a perennial
Blended soup looks like you made an effort when you didn’t really

The Mumsnet cookbook has some great soup recipes in.
One that I loved and haven't made for far too long is The Unlikely Lads one. Broccoli and mushroom, which doesn't sound to appealing but tastes delicious.
Even my dc liked it and they always say they hate mushrooms an one of them doesn't like broccoli either.
I didn't tell them what it was, I just said it was vegetable soup Grin

I made this yesterday and it was lovely!

You can add chicken or whatever protein you like instead of prawns.

Red lentil Turkish soup by Hugh Fearnley thingy. It was in the Guardian which you can google, sorry dont know how to link. I also add pearl barley to veg soups, makes them super filling.

ThePlantsitter · 13/02/2021 15:49

Leek mushroom and potato is my favourite, not whizzed up so more like a stew (or maybe that's what a broth is?)

ErrolTheDragon · 13/02/2021 15:57

Roasted red pepper, lentil and tomato is my favourite at the moment, with smoked paprika and maybe a little bit of chilli.

IDontMindMarmite · 13/02/2021 16:03

The chunkiest chicken noodle soup complete with far too many rice noodles, beansprouts, mushrooms and sweetcorn.

Harrykanesrightsock · 13/02/2021 16:05

Spicy parsnip and butternut squash. Also carrot and lentil. Both really filling.

Mexican tortilla soup: Shredded chicken, black beans tomato, corriander, cumin and chilli broth with sliced avocado, sour cream and crushed tortilla chips on top.

MirandaMarple · 13/02/2021 18:05

Lentil, tomato and bacon, I slow roast the tomatoes first. I usually get bored of soup if I make the same one too often but thus never disappoints.

Some great recommendations on here, I love a good soup

whenever we get a celeriac in the veg box I make thus winter veg chowder with mustard, lemon and crispy cabbage

On the hob right now for lunch is this beef and barley soup

Nigella posted a sweet corn chowder with cheesy tortillas on her Twitter recently, going to make that next week

potage crecy - its an onion, about 6 big carrots, large potato (all chopped or sliced) handful of chopped parsley, black pepper and stock. boil for 30 mins and then puree. tastes better than it sounds.
