Is it me, or is it the recipe?

This recipe is telling me to cream the butter and best in the sugar until light and fluffy. I thought the proportions looked dodgy, but it's generally a good idea to follow a recipe properly for the first time you make it. It's not creaming. It certainly doesn't look light and fluffy - more like crumble topping!

So is it me or the recipe?

Not enough butter in the cake mixture! It should be about equal to the amount of flour

How cold is the butter? Can you warm it up a bit and try beating again when the butter is softer?

I've got a recipe like this which has very little butter in - the one I have is for sticky toffee pudding, and I was sceptical the first time too but it does work...

Oh, hang on. The topping or the cake? Yeah, 40g butter and 225 sugar isnt likely to cream well

The Chef has been beating for over 20 minutes and it's still not creaming. The topping is made (bottoming, actually- it's an upside-down cake) and I need to get the cake in the oven before dc's Teams lesson begins in 15min.

If it's for the 'bottoming' it will be fine as it will melt in the oven to caramelise the apples. You'll need more sugar to butter for that.
