How to make jacket potatoes even better

I mean they are already pretty damn good and we have them about once a week. But I’m wondering if anyone has any sneaky tips to make them even better, is there a trick to make the skin super crunchy or is it all about the fillings.
What’s everyone’s favourites fillings or sides?

Slow cooked in a not too hot oven

Metal skewer through the middle and straight onto the bars of a hot oven whilst the skin's still wet from scrubbing. Although I am going to try the cast iron casserole option now I know about it.
Fav filling is cheese and beans, although leftover chilli is a hit too.

Exactly as @Lunaballoon says above. Twice baked ... Preferably with butter, cheese, spring onions and pepper. Smile

For a quick lunch microwave the tattie for about 7 minutes then finish off on George Foreman grill drizzle in olive oil, turn to crisp up skin. add salt when done. Eat with a filling of drained tuna, sweetcorn, chopped spring onion, lashings of mayo and S&P.

I could eat jacket potatoes everyday. We have once a week at least. Oil and salt and in the oven a bit longer than you think.

Going to try garlic salt and elfe potatoes - don't know what these are though, just a certain type of potato?
