I've got a big roasting joint of pork for the weekend and want to use the leftover pork to make pork pibil tortillas.
I'd love to use the Wahaca recipe but the recipe and any others I've found require you to slow cook the pork in a marinade.
I'm guessing the marinade will be too strong to just add to reheated leftover pork.
Has anyone made PP with leftover cooked meat and knows how to go about it? Thanks
