Does anyone have a good Mac n cheese recipe please?
I’ve tried a few lately but it always turns out a bit dry....I want (DS wants) a nice gooey one!

I use the 'luxury macaroni bake' from the Batch Lady recipe book. She has a more basic version on her website which is probably just as gooey! Just add some chopped cherry tomatoes and top with breadcrumbs and grated cheese for the more 'luxury' one!

This one. The tomato's and the hotdogs cut through the richness. It's a family favourite although we just do it with cheddar and Parmesan:

Stir some English mustard through the sauce. Really enhances the cheesy flavour.

butternut squash Mac and cheese

This makes enough for 3-4

Cut into chunks half a large or a whole small butternut squash . Roast with oil garlic, salt, and fresh sage for about 30mins or til soft
Put aside. You can do this before and keep for later

250-350g pasta depending on how hungry you are .Cook as per instructions

In another pan make sauce
40g butter
40g plain flour
600 ml milk
Nutmeg
175g cheddar plus some to sprinkle on top
Also some grated parmesan for the top if you have it

Melt butter in medium heat, add flour and use a hand whisk to mix to a paste
Add milk, grating of nutmeg and salt, pepper to taste

Heat while whisking with hand whisk until it thickens . Add 175g cheese and butternut squash to sauce

Mix sauce and pasta in a roasting tray. Sprinkle with rest of cheese and grill for a few mins until cheese on top melts and goes brown and goey

This is very nice. DS loves it

Always add a dollop of mustard to the cheese sauce as well as some Worcester sauce, I love it drizzled with honey and mustard dressing too, it cuts through the richness.

@lollipoprainbow - Maille do a honey mustard. Do you think that would work too? It's bloody gorgeous as it is. I'm thinking it'd really lift a cheese sauce.

If you have an instant pot or pressure cooker this one is great. I add some bacon and leeks that I've fried separately and then top with breadcrumbs and cheese in a baking dish and grill the crisp the top up.

Make double quantity cheese sauce and add cream and dash of mustard.
Always use strongest cheese you can find, you need less to get the full cheese flavour.
Make sure you have the cheeses topping with breadcrumbs for crispyness.

Male friend of mine just used to melt cheddar, Jarlsberg and cream cheese together then stir through pasta. He’d top with a mountain of grated cheese and grill it. Garlic and chilli flatbreads to go with and some attempt at health via salad.

It was too much for me but his boyfriends always lived it.

I was always a purist about doing it the English way with a crispy top until I found Nigella's version of the US "mac n' cheese"

If you prefer it a little more traditional thougj, but with a twist, this one is amazing. You can chuck in what you want really, chorizo etc. It's yum!

Yes! I got confused, homemade Baileys I make with condensed milk. Both usually at Christmas.
