Best vegan birthday cake recipe

I've a friend who always brings cakes to get togethers as she is vegan and doesn't expect others to bake for her, bless her. So I'd like to make her a cake to cheer her up as she's having a bit of a tough time.
I know there are lots of recipes online but would prefer tried and tested, with ingredients that are generally to be found in supermarkets. Thank you

The bottom recipe. I use rice milk and it works fine. I also add vanilla. I have used some ground hazelnut meal and it’s divine.

Thank you. What is the best vegan butter replacement for baking?

This chocolate cake is delicious. Definitely wouldn’t be able to tell it’s vegan, and you probably have all the ingredients at home already.

You can make a really easy vegan cake by lightly stirring 1 can of coke into a betty crocker chovolate cake mix (or lemonade into a vanilla cake mix). This avoids that horrid bitter bicarb taste so many vegan cakes have . You have to be careful to use 'full fat' coke though as artificial sweeteners give a slimy texture.

The best vegan cake I ever tried was a chocolate and fig brownie I bought from a cafe. I don't have the recipe for this unfortunately but I'm just throwing out ideas.

Also, Nigella's rocky road recipe (substitute the butter with vitalite, the choc with dairy free choc and the biscuits with fruit shortcake biscuits) is immense.

I never got on with the ubiquitous wacky cake - it never rises and taste's bitter as fuck. Mihht just be my cooking though, it seems to be universally loved by the vegan community.

Thank you @karmakameleon , that looks nice and simple! Is it easy to find vegan choc chips for the glaze?

Thank you @Chwaraeteg . I'm just nervous of accidentally using something that isn't obviously not vegan. Eg I once offered friend Prosecco but she pointed out that that particular brand wasn't vegan, apparently also some apple juices become non-vegan during processing.

Most dark chocolate is vegan so I just chop up a bar of standard dark chocolate.

Sorry. Technology fail. I just use margarine.

Powerplant · 09/02/2021 10:57

Block Stork margarine is vegan. The best sticky toffee pudding I made was by The Easy Vegan absolutely delicious. Lidl dark chocolate is vegan so not expensive.

Ok thank you, I looked at a couple of blocks of marg in the supermarket which said they were vegetarian, not specifically vegan, will take another look next time I shop
