Curried fish finger sandwich
The Bombay mix brings an unexpected spicy crunch that takes this sandwich to the next level.

Cook 15 min
Makes 2

8 fish fingers
100g Greek yoghurt
Juice of 1 lime
1 tbsp curry powder
Salt
2 tbsp mango chutney
4slices farmhouse loaf
1 granny smith apple, cored and finely sliced
1 cos lettuce
100g Bombay mix

Cook the fish fingers according to the packet instructions. Mix the yoghurt, lime juice, curry powder and season with salt.

Spread half the mango chutney on one slice of bread, spread half the yoghurt on another slice, then put half the fish fingers, apple, lettuce and Bombay mix on top. Put the lid on.

I do something similar with either chicken, egg, tuna or white fish. Complete with uncooked curry powder. Comes from eat well for less cook book (they just do chicken) Tastes lovely. Add raisins sometimes

Can see it working with fish fingers, just an extension of the white fish really. Bombay mix is a bit of a mystery.Confused

It sounds like a fish version of coronation chicken, another hideous monstrosity posing as a take on Indian food. But some people like coronation chicken so I’m sure some people would enjoy this.

I don't think anybody thinks Coronation Chicken is an authentic Indian dish. The key ingredient is curry powder, a British invention bearing a distant relation to garam masala is my understanding. In the 19th century it would have appealed to anyone with a family member who'd spent time in India on some sort of imperial service, e.g. army or civil service or forestry, or anyone looking for a bit of novelty. I think it's mentioned in Mrs Beeton. Coronation Chicken is a dish invented for the 1953 coronation, when there was still some rationing in force, India had become independent, the Commonwealth was getting going, but large scale immigration from the Indian subcontinent had not yet started, so there was hardly any authentic Indian food available in the UK.

Surely the fish fingers bring crunch already? You could add spice other ways. Might try the mango chutney though.

Apart from the Apple it sounds great! I'd actually substitute Mayo for the yogurt to be honest ..

DH is a notoriously fussy eater, but had his with white bread and Mayo instead of the yoghurt. Said it had a certain something, would eat again.

I do find it’s worth while getting good quality mango chutney. The crisp slivers of apple with the spicy nuts from the Bombay was just great. Only thing I might change is the curry powder to the yoghurt, there’s enough spice in the Bombay.

Go on, you know you want to!

On the strength of this thread, I've ordered Bombay mix and fish fingers with my next delivery. Grin I will also report back. It will probably be with wholemeal bread, as I forgot that white bread might be better.
