left overs of chilli con carne

Hello, i have some left overs from chilli con carne (without rice) which i've frozen. It's now defrosting in the fridge for tomorrow. I had an idea of using it for stuffing peppers but I'm not sure if it's okay and it wouldn't get overcooked. had anybody tried to do anything similar or may be some other interesting recipes with left overs of chilli con carne? Thank you.

just heap loads of it onto baked pots and then grate a ton of cheese over it and eat it all

sorry no help at all but I LOVE chilli con carne and alwasy make too much so I can do thios the next day for lucnh and tea(and sometimes even brekky)

Or mix it in with cooked pasta, grate loads of cheese on top, and put under grill until cheese is melting and bubbly mmmmmmmmmmm

or do a tex mex taco dish?
Fill tacos with chilli, top eith shredded lettuce and tomatoes, grated cheese, guacamole, mayo

If you've got any frozen pastry (or feel like making your own!) it makes lovely, different kind of pasties.

I also make wraps with left over chilli. Cook it until it's quite dry, otherwise it makes the wraps very soggy, then make each wrap with chilli, shredded lettuce, grated cheese and sour cream.

if you cover the dish the stuffed peppers are in with foil it won't get over-cooked. Peppers will only need about 30 minutes anyway.

Or if you have a marrow, cut it in half, scoop out most of the flash, chpop this small, mix into the chilli, fill the scooped out marrow halves with the chilli, top with grated cheese, cover with foil and bake, then uncover and under grill for last five minutes...

Thank you so much, so many responces and so quickly. I forgot to mention that I'm tying to follow no carbs after 5 diet which suggests no potatoes, rice,cereal, bread or pasta that's why i was thinking of stuffed peppers or marrows or may be vine leaves? Any ideas are so much appriciated. thank you.

Ooooh yes, wraps are very nice too, and good as DCs can assemble them themselves.

I'm off to raid the fridge, hopefully for something involving melting cheese........

Well you could use it to stuff cabbage leaves.

Buy a savoy cabbage, carefully peel off however many leaves you need, and parboil these for about 2 minutes.

Refresh/dry them, then cut out the tough spine of each leaf, then fill with the chilli etc as for wraps.

I always use it on backed pots with cheese on top 2. I always think chilli con carne tastes nicer the next day

Thank you, plenty of recipes, I think I'll do double amount of chilli next time and try some, this time I'm really tempted by cabbage leaves. Thank you. I just had 2 apples and resisted cheese, i have it occasionally but i try to limit the amount (borring diet but when can I do).
