What shall I do with these parsnips?

They’ve been forgotten, in the back of the cupboard Blush
They’re not rank but definitely past their best (I’d bought them for a roast that never happened)

What shall I make with them?
My creativity is having a morning off and I need help please.

Grate, mix with some grated onion, tablespoon flour, an egg, drop in mounds into hot oil in a frying pan and make pancakes/fritters. Eat with sour cream and smoked salmon!

Roast parsnip and garlic soup. Peel & chop, drizzle with oil in roastig tin (not too heavy handed with the oil) chuck some not peeled garlic cloves & salt and pepper and thyme if you like in, roast for about 20/30 min. Put in a pan, squeeze the garlic out of its skin into pan, add stock and chilli flakes if you like a bit of heat and bring to boil. More seasoning, whizz it up, yum yum. I am a really tiny bit of apple cider vinegar if it's too sweet.

Traybake with sausages, onions, carrots, any vegetables you fancy. Easy meal!

I make soup with parsnip, potato and leek. Garlic and a vegetable stock pot. Thyme or similar.

Parsnip and apple soup. An onion, carrot, the parsnips, a small well flavoured apple, veg stock cube, milk to thin.
Sweat the veg in a little oil, add stock cube and apple. Cover with water and simmer for half an hour or so. Blend until smooth. Thin with milk, season to taste with salt and freshly ground black pepper.
Eat with thick ham sandwich.
