Grilled paprika chicken and veg skewers with salad
Vegetable chilli cauliflower rice
Cod with sliced chilli, garlic and spring onion, cooked in foil on a bed of peppers, tomatoes and red onion. Served with broccoli and green beans.

It’s just cauliflower blitzed in a food processor, steamed or toasted on a baking tray. I think you can also buy it in most supermarkets.

Some supermarkets do cauliflower rice steam bags in the freezer section.

Fresh salmon, couscous and veg
Chicken marinated in sauce of your choice, naan bread, salad and yoghurt
Chicken fajita with lots of crunchy peppers
White fish, potatoes, courgettes, tomatoes in an oven proof dish with olive oil, dried basil and dried oregano

I'm a big fan of a tray bake when cooking for one. Either chicken or fish on top of various vegetables baked in the oven. For Greek flavours add garlic oregano and lemon, for Middle Eastern cumin/coriander etc etc, there are loads of tray bake recipes/ideas that you can tweak to make low fat or low carb and it's minimal effort.

I also make a chicken and veg chilli to keep in the freezer. I don't follow a recipe but it's basically a couple of chopped onions/garlic, couple of chicken breasts or thighs, teaspoon of chilli powder, cumin, coriander and smoked paprika, couple of tins of chopped toms, a crumbled chicken oxo, tin of kidney beans, and whatever chopped veg I have in the fridge (peppers, courgettes, aubergine, anything goes) Cooked in a casserole in the oven.

Significantly reducing carbs is the only way I can shift weight when I need to lose a few kgs. I'm a potato fiend, and find cauliflower an acceptable substitute. A few on rotation,

Zucchini fritta with poached egg.
Cauliflower and leak soup, broccoli and kale soup, etc - no potato.
Roast chicken - leftovers for chicken salad, stir fry, etc.
Oven roasted mushrooms with thyme and black pepper with cauliflower mash.
Oven roasted chicken legs (with red chilli flakes and garlic) and salad.
Fish in paper bag with onion, white wine, and dill, serve with roast carrot and broccoli.
Steak with roast sweet potato and steam greens.
Steak with kale chips and green beans.
Tuna bake, be careful on how much cheese you use.
Lamb cutlets with roast tomato, roast cauliflower and yoghurt.
