Fed up of making lunch during lockdown

Right then I need some help as am tearing my hair out here.

I am so so fed up of preparing meals 3 x a day. I love cooking but the prep, clear up etc is taking up all my time!

Can anyone help with some easy lunch ideas at least as usually we would all be out for that and it's driving me round the bend having to think about it.

DH- eats anything apart from fish
Me- eats anything but trying to do lowish carb/high protein Med style foods
DD- eats anything apart from sandwiches (I know Hmm)
Baby- weaning. Nearly 8 months.

Today I made a very basic sweet corn chowder for the baby as she hasn't tried sweet corn yet. Pasta for DH and DD. Salmon with greens for me. Then yoghurt with fruit purée for dessert. I feel like a chef.

I definitely haven't been doing enough batch cooking. Or at least making enough to have leftovers when we have dinner. I think I will try that plus more deli food.

DD is a funny one - since not long after weaning she has been reticent about things like sandwiches. A cheese sandwich would be her room 101. But will happily eat sushi, Korean food, Indian etc. We thought this was ace until she started school and the default school trip food is a cheese sandwich!

How about the Save with Jamie book, he does lots of recipes where you cook a big joint and make several recipes from it.

I have one like that. Will eat practically anything but a sandwich, pizza or pasta, the staples of kid’s food. Great for eating as a family but a nightmare when other children are involved.

For lunch I tend to give him leftovers if there are any or an omelette/fish fingers for something quick. Also a deconstructed sandwich works. So bread and deli intend on the plate separately here and eaten.

Hahaha so went out with the baby to Coop to pick up a few cold deli items for lunch. I kid you not- all the fridges were out of order so no fresh food available. Then went to little café next door to get a takeaway. Minuscule space filled with about 8 people without masks on. So gave up on that and walked to the deli in another area. Was a very nice easy lunch in the end but I had to get my steps in to locate it!
