Any good vinaigrette recipes?

I made one for a pasta salad that was just olive oil and white wine vinegar. Was nothing special. Will probably add garlic next time. Anyone got a nice one they recommend?

I make a thick one that doesn’t separate by gradually whipping the oil into some Dijon mustard, then once all the oil is combined I add balsamic vinegar. I season it with sea salt and freshly ground black pepper. It keeps in the fridge for a couple of weeks. It’s great on avocados and roasted vegetables.

If you want it a bit thinner, just dilute with a bit of water. That also reduces the calories.

My go to is 1 tblspn balsamic vinegar, 2 cider vinegar, 9 tblspn light olive oil, tspn runny honey or sugar, salt and pepper, 1 clove crushed garlic. Put all in screw top jar and shake to mix. Lasts until ive used it all, then make again. I dont even refrigerate it.

Basically i worked out 1 spoon of vinegar to 3 of oil seems to work well.
