Roast Chicken other than seasoning, what else do you do to yours before shoving it in the oven?

So as usual salt pepper and in the oven my chicken goes...do you do anything else to shuzzz it up???

I stick half a lemon and a bunch of fresh herbs in the cavity. Then brush garlic puree all over the skin before seasoning.

Sometimes put whole herbs (sage is very good) under the skin.

Sometimes rub the outside with jerk seasoning or coat it with tandoori spice and then half an hour before serving coat it again in a mix of tandoori spice and natural yoghurt.

Also sometimes squeeze fresh lime juice all over the skin as it seems to make it extra crackly. Sprinkle with salt and put the squeezed lime skins inside the chicken.

Sometimes put it on a rack inside the roasting tin and pour a glass of wine underneath it with some fresh herbs to steam roast it, and then use that and the juices as the basis of gravy.

Sometimes stick a lemon and onion chopped in half inside. Dried herbs amd olive oil on the skin. Easy peasy!

I cover it with rashers of streaky bacon rather than salt/pepper/oil/butter.

Lemon and thyme in the cavity, butter the skin and then cook on a bed of carrots, celery and onion which then go into the gravy (have to strain but is delicious). Quite often also put some streaky bacon over the top for the last 40 mins.

I prefer to put a halved, unpeeled onion in the cavity. I also render any lumps of fat from the cavity and brush the skin with it before seasoning with salt, pepper and a little paprika

I make a butter mix with salt, pepper, garlic etc and stuff under the skin of the breast... so delish!!!

Sit it on veg. Make sure it is really dry (not wet from packaging).

Always squeeze lemon and sprinkle fennel seeds over it at the minimum. Fresh thyme if I have it. Drizzle of olive oil. Salt and pepper. Lemons in the cavity. and roast chicken on a bed of onions and roughly chopped carrots with a few whole garlic cloves thrown in. Then about 1 small glass of wine in the roasting tin - gravy is amazing and the wine creates a slightly steamy effect that keeps chicken super moist.

Sometimes stick garlic and butter under the skin if I am feeling like I really want to splash out!

Slather the skin with English mustard, push knobs of butter under the skin.
