Here's my tip for easy peeling fresh ginger. Simply peel it with a teaspoon. You won't believe how easy it is!

Another one - it freezes very well and you can grate what you need when it's frozen then fling it back into the freezer until you need it again.

I grate it straight from the freezer, skin and all (useful roughage I am sure Grin)

I like the pre-chopped frozen ginger too but not sure it’s as flavoursome

I have never peeled it. I grate it straight into cooking/salads etc and you don't notice the skin.

I ordered a whole bunch via HODXpress, their organic produce is the best. And yes, always put your ginger in the freezer! Makes life so much easier...
