I can make Asparagus soup or quiche - what else is there?

Got a load in my veggie box and not sure I fancy soup right now

What else can I make? Veggie ideally

Just boil gently and dip into a dippy egg. Doesn't get any better. (If you weren't veggie, I'd also suggest some Parma ham or bacon too)

Hmm I'm not veggie but I dont really eat asparagus - the other 3 do (all adults with big appetites)

Yeah, dip in boiled or poached egg. Or just with some butter as a side for a roast.

Risotto - delicious. It's also really nice stir fried or in a Thai curry or something like that. And I love it on pizza.

I love asparagus risotto - ideally with blue cheese, but spring asparagus should be treasured with just a dusting of parmesan. It is delicious griddled and incorporated into a frittata, or buttered next to a pile of sweet potato mash (we'd have pork chops with it).
Mmmm, I can't wait for it to be seasonal asparagus time. I live in the heart of asparagus country and my local farm shop have it growing outside and sell very cheap bags of trimmings and odd sized spears so I can gorge on it

Just blanch them lightly and serve with a dollop of Hollandaise and black pepper. Never gets boring. So jealous!

In the UK but I am trialling a box of out of date fruit and veg a week to prevent food waste

I was pleasantly surprised by what was in it- only asparagus that we wouldn't normally by and only the mushrooms needed cooking today ( so the kids had fake steak and mushroom baguettes instead of steak and onion which was on the meal plan)

Risotto is a real possibility! Thanks

Asparagus is lovely just on its own, hot from the pan, with butter and pepper. Yummy.

The other thing I love is to char asparagus in a dry frying pan, or with just a tiny bit of oil, splash a bit of good balsamic vinegar over it and eat with fresh bread plus either shaved parmesan or some feta.

Blanch, wrap in small batches with bacon and griddle. Top with a poached or fat fried egg.
Puddle of hollandaise on the side and either some toast soldiers for the egg or dip the asparagus spears.

Or just steam and stuff it down in a puddle of melted butter.

The worst thing to do it overcook it. IMO mushy, soft asparagus is overdone! You need a bit of bite. Hold the top and bend the base till it snaps off and throw that bit away. This will be the point where its dried out. if you just cut off the ends, you will end up with hard, woody bits, but letting it snap naturally is better. Use asparagus asap, because they loose moisture quickly.

  • lightly fry in garlic butter
  • wrap 2-3 spears in proscuitto/palma ham and grill till crispy
  • Serve with breakfast, toast, eggs, tomatoes etc and cover in hollondaise sauce.
  • Serve for dinner with salmon or just other veg
  • Asparagus omelette

I adore asparagus and always feel excited when I see the boards outside the farms around by where I live " local asparagus for sale" I lead a very exciting life Grin

I love it totally on it's own, soup, risotto and with boiled eggs.
