Help! Fresh Anchovies (also help me prove DH wrong)

Long story short:

have plenty of food in but from a fairly limited stockist.

Had a chance today to have a wander round a big supermarket and bought some things I've not been able to get.

Made one impulse buy: fresh anchovies.
Very cheap and I've never cooked them, but but cooking has been a nice diversion for me during lockdown.

DH (who doesn't accompany me shopping: he has more risk factors then I do) sneered a bit at them and said: "Buy in haste, repent at...mumble".

I didn't bother to point out that it's marry in haste (we didn't, so it wouldn't have been very witty), but I really want to do something really delicious with those anchovies, so he will regret doubting me for ever more...

PS This really isn't a (an?) LTB type of thing.
He's very nice.
It's a minor wanting to get the better of him thing.

For the fresh anchovies - which look like something between fresh sardines and white bait - I think AgentProvocateur has the right idea.

Trouble is, DH isn't keen on white bait or whole fried fish.
Well, tough - he can cook his own that day.

Just wondering if anyone has any recipes for fresh anchovies rather than tinned?

Boquerones fritos as AgentProvocateur suggested is the classic option or the tapas I suggested, which also works as a side for soup. You could substitute them in a devilled whitebait recipe.

You can also substitute tinned (but not salted) anchovies with fresh. The flavour is much milder though.

This works with fresh anchovies. I sometimes throw in some chopped baby plum tomatoes too.

BTW you might need to gut the anchovies if they aren't already prepared.

I would cook them as whitebait but add a v small amount of smoked paprika to the flour, then serve with aioli and a spinach salad.
Im so jealous one of my favourites.

If you like the simple life, there is nothing better than garlic and parsley flatbread topped with fresh anchovies and a glass of crisp white wine!
