Looking for some inspiration. I don't eat beef, but have some to cook for the family.

Can anyone suggest a recipe? Not meatballs, lasagne, bolognese, cottage pie...

Beef Wellington. Hope I'm remembering this correctly, but it's basically minced beef with carrots and other cooked veg, all wrapped up in puff pastry as a tube and cooked in the oven.

'Official' Beef Wellington definitely isn't mince & veg but that would be nice for a cheaper alternative.

CHEESEBURGER PASTA tastes a lot nicer than it sounds.

Dh loves beef Wellington, so would not be impressed if it was made with mince!

Leaning towards Mexican, however a lot of authentic recipes seem to use whole pieces of beef and shred after cooking.

Minced beef seems to be more tex mex.

I have some mini tortilla, so could do the taco idea with salad.

Keema? Curried mince and peas. Just use beef instead of lamb. Serve with aromatic spiced rice.

I do a mince and mushroom pie, but with mixed celeriac and potato topping (with cheese). Maybe too close to a cottage pie?

Otherwise I second hard shell tacos.

I make what we call Mexican lasagne. It’s basically a chilli, layered up like a lasagne, using tortillas in place of lasagne sheets, topped with cheese and baked.
