I'm working my way through some tins that have been loitering at the back of the cupboard Smile.

I'm guessing green lentils were on special offer at some stage Blush.

Any nice recipes please?

I always put green lentils into a curry, especially good with paneer.

A popular meal in our house:
Boil the lentils
Fry lardons or chopped bacon with some onions, garlic and a red or yellow pepper
Chop cherry tomatoes
Mix everything together with some oregano, olive oil and a little bit of balsamic.
Serve in a bowl with crusty bread.

Lentil and ham soup.
Just cook them with some stock and whatever herbs you dance and add some ham/gammon

I always put them in shepherds pie, chilli, bolognese sauces as they make the meat go further and add a lovely texture.

I make a salad with a tin of green lentils, cooked diced beetroot, lots of feta and chopped mint. Sprinkle chopped walnuts on top, and dress with vinaigrette. It's bloody lovely!

There is a great Ottolenghi dish of rice and lentils from his jerusalem book. I use tinned lentils rather than dried to cut the faff. It is amazing with ME style chicken dishes [[https://www.theguardian.com/lifeandstyle/2010/oct/09/mejadra-recipe-yotam-ottolenghi]]

I use them:
In a veggie spag bol
In a veggie sausage casserole
In a lazy curry using her pa ste, served with hardboiled eggs

Rinse carefully or they smell horrible.

thank you all very much.

I used red lentils last week to replace 50% of the meat in a shepherds pie and I'll definitely try that with the green lentils too.

All of the dishes sound lush but I think Weegiemums chilli is going to get first place as I've got all of the other ingredients. I'll mark this thread though and come back a choose another one next week.

I made the Leek and Lentil Gratin from the Green Roasting Tin when I had a big group of veggie friends over (in the pre lockdown days...) It’s meant to be vac packed lentils, but I used tinned (drained) - don’t think there’s a difference. Really hearty and warming at this time of year, so nice with a green salad on the side and some crusty bread.

Add green lentils to a sausage and tomato casserole instead of chickpeas or butterbeans.

Gently fry a chopped onion and some chopped bacon in a small saucepan, add tinned green lentils and some crushed garlic. Heat through and serve with pork chops, left over roast pork slices, sausages, boiled gammon etc etc.

Rinse and drain a tin of green lentils, in a bowl combine with crushed garlic, finely chopped spring onions, chopped olives, chopped sun-dried tomatoes, chopped artichoke, vinaigrette dressing. Serve on a bed of mixed leaves with charcuterie, or slices of cheese, or tuna/sardines for a quick mainly store cupboard supper.

Thanks for the extra posts and Saraban, your recipe has moved into top space as I realised, I've made the aubergine chilli dish before Blush

And as luck would have it, I have all the ingredients apart from the leeks which I can get from the market tomorrow.

Can anyone else waste hours looking at and planning recipes?

I add them to chopped onions and mushrooms and sausages and bubble away in a bit of cider and stock - delicious.

@Saraban thanks for the green lentil gratin recipe. That looks excellent for a weekend project meal. I might throw some thyme in there as well.
