can I cook salmon and potatos in the slow cooker together

No the potatoes will take much longer than the salmon to cook.

you could make some kind of tomato-based stew thing and put the salmon in at the end.

Well if you cut up the potatoes quite small and put them in with some onions, garlic, peppers and a tin of tomatoes with some herbs and a cup or two of stock, they should take about 20 minutes. Then add the salmon and cook for a further 5-10 minutes. season with salt and pepper.
