Fool proof Apple Pie recipe

I would love to make a nice apple pie but am useless with pastry.
Can you recommend a really simple, idiot proof Apple Pie recipe please.

I'm no help, but watching with interest - when I make fruit pies I just stew the fruit in a glass Pyrex dish and top with a pastry lid - anything else is always too soggy whatever I do.
I mainly make Eve's pudding with apples, I can never perfect pie.

Funnily enough, I am in the middle of making an apple pie. I use Stell Park’s recipe on serious eats (www.seriouseats.com/recipes/2017/09/bravetart-easy-apple-pie-recipe.html). Works perfectly all the time and the pastry is fantastic - easy and foolproof.

I make an apple cow pat - does not even need a rolling pin.

Grab a lump of ready-made pastry and beat it flat with your fists until you have something resembling a flat circle. Paint some beaten egg on it (this stops the bottom going soggy). Finely slice some cooking apple into it and sprinkle sugar and mixed spice over it. Pull the sides up into a sort of volcano shape and squeeze to roughly seal. Paint the rest of the egg over the outside and sprinkle with brown sugar - then bake.

Easy as pie!

I tried the BBC Good Food Ultimate Apple Pie recipe. I even fecked up that. BlushSad
It looked meh going in to the oven but tasted ok.
It's the pastry.
I found it really difficult to roll.
I left it in the fridge for over an hour. The recipe said 45 minutes- would that have made much of a difference ?

@Mischance At what heat and for how long do you bake your volcano ?
