Easy pre made or frozen vege meal ideas

For various reasons my much younger half sister is moving in with us at the weekend. She is in a bubble with us as we are very close and she's living alone.

I want to make her feel welcome and she is vegetarian and we are not. I normally would let her cook her own meals however this is going to be hard as we are in the middle of a kitchen renovation so we only have 2 rings we are able to use.

So if I make spag Bol and want to make a meat one and a vege one it's hard to cook on two rings when I need 3 !

We are eating very 'easy' meals at the moment due to not having a proper kitchen, so we have pasta , spag Bol, curry, chilli and fajitas

I really want her to feel welcome and want us all to eat together and the same meal eg all eat a curry and just two different sauces.

I don't want to buy vege meals that come with the rice or pasta on the side but does anyone know if I can buy just a vege pasta sauce or curry sauce with vege s in that I can pop in the microwave?

Thanks

Should also add or easy to prepare meals.

I have also got rid of a lot of my pans when we packed up the kitchen so only have a few to use

Have you got a slow cooker? A big pot of minestrone can be portioned up and reheated.
Sorry that's all I can think of ! I like veggie lasagna but that's complicated

Cant you just make mostly veggie meals for everyone while she's with you until the kitchen is fixed? I'm not a vegetarian but my favourite curry is chickpea. Chilli with beans and veg but no carne is fine.

And one of my favourite stir fries is with cauldron foods marinated tofu not meat.

Also if you can free up a ring by using couscous instead of rice as that just needs boiling water from a kettle.

Yes,you can buy vegetarian sauces. Dolmio and other brands including supermarket own brands do lots of tomato sauces for pasta. You can buy vegetarian chilli and curries too, either fresh or tinned in most supermarkets. I use tinned vegetable curries a lot and they are fine. All of these can be cooked quickly in the microwave.

Unfortunately no I can't, partly as I have fussy young children who do it lots of veg but are fussy with dinners. I try to stick to meals that everyone eats, eg cous cous 3 will eat it and two won't !

Most supermarkets sell fresh pasta sauce alongside their fresh pastas. Waitrose certainly do an arabiata, roasted veg and olive and I think they do a mushroom one too.
For curry’s if you look at the supermarket takeaway style curries a lot sell side dishes that are veggie, which make an equally good veggie main. Things like dhal and aloo gobi.
