hmm..my kitchen smells of pumpkin pie..

I made pumpkin soup and it was absolutely delicious ( preens in an Upsy Daisy like fashion)

Recipe recipe pleeeease!

I'm already on track to make soup but ds prefers sweet things. Pumkin pie might hit the spot. I'd be ever so grateful! (creeping emoticon)

broccolispears its most definately sweet
whipping dh the cream as we speak iykwim!

its quite simple

sweet shortcrust pastry

its american recipe so fecking 'cups' sorry

2 slightly beaten eggs
1 & 3/4 cups shredded / mashed pumpkin
3/4 cup brown sugar
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp mixed spice
large tin evaporated milk

combine ingredients and pour into pastry case in pie tin (bake it blind for 10 mins, baking beans etc)
bake in oven at 230 C for 15 mins, reduce heat to 180 C and contine for another 45 mins approx

dh finds this amount makes 2 pies

serve with fresh cream
its whipped here!

shortbread pastry ,i forgot

1lb plain flour
pinch of salk
10 oz margarine
5 oz caster sugar
1 egg beaten

combine, knead & let settle

as i said, about 2 8" pie type dish

i grated in fresh nutmeg dh thinks its that

its got funny after tinge, but perfect every other way..not enough to stop you eating it but you do wonder after wtf it is..

dont let it put you off,
its lovely if recipe followed..

Irene - I don't know if you're about, but a quick question re the pie.

Must the mashed/shredded pumpkin be cooked at all before it's combined with the other things?
