Rice cooker recipes!

Recently got a rice cooker. The rice cooked in it has been life changing! So perfect every time and no mess or faff.

I've also made brownies in it which turned out great.

Otherwise have only done plain rice

Any other successful rice cooker recipes? Smile

I only cook rice in my rice cooker but I did watch an anime once about a boy who wants to invent japanese bread (Yakitate Japan) where they give you the recipe for making bread in a rice cooker.

It's like brioche apparently.

Notgotanyidea · 18/01/2021 16:09

We often make porridge in ours

I've got a microwave rice cooker, & it is foolproof.
I add different things to the rice, apart from salt.

e.g. nigella, cumin, caraway etc, spring onion, peppers, peas
Not had it long, so still experimenting.

Does anyone have a recommendation for a plug in rice cooker?

Thanks!

bookshop1 · 18/01/2021 18:26

@cambridgeah this is the one I have! It is small but very good. They do have bigger ones though. www.yumasia.co.uk/panda-mini-rice-cooker-with-ceramic-bowl

I wish I liked porridge, that would be perfect. May try some sort of oaty fruity flapjacky type thing as an experiment though..

@happysunr1se have had a look and come across this bread recipe which looks good

Rice n' Peas

White (or brown rice)
Half water half coconut milk

I make all kinds of things but it's also a pressure cooker. If it's just a rice cooker then not sure

Miso Chicken in a Rice Cooker
Serves 4
2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon Shaoxing wine

1 tablespoon white or red miso

1/2 teaspoon salt

1/2 teaspoon sugar

1/2 teaspoon sesame oil

4 boneless, skin-on chicken thighs, cut into 1" pieces

150g chestnut mushrooms, sliced

1 cup jasmine rice, rinsed

1 cup chicken stock or water

1 slice (¼" thick) fresh ginger

2 spring onions, cut into 1" pieces

In a large bowl, whisk together the soy sauce, hoisin sauce, wine, miso, salt, sugar, sesame oil, and a few grinds of pepper. Add the chicken and mushrooms and fold to coat.

Combine the rice, stock, and ginger in a rice cooker.

Pour the chicken mixture and all of the marinade on top of the rice. Scatter with spring onions.

Cook in rice cooker.

@aesopsmables great idea, we often have jerk chicken so that will be perfect! Thanks

@jerble that sounds delicious, exactly my kind of dish. Excited to try it! Thank you

Excellent! All my family loves it so we have it quite frequently. The original recipe says you may have to switch the rice cooker back on for a bit longer to make sure the chicken is cooked. But I just leave it closed and let it carry on steaming for about 15 minutes or more and it’s fine.

Jerble · 26/01/2021 17:45

I also prepare the mixture in the morning and let it marinade for longer. Even just a half hour beforehand is good.

Just found this old thread whilst looking for inspiration. So far I’ve only tried Korean gochujang chicken and rice and soy honey chicken and rice cooked in the rice cooker- marinate the chicken, clean rice as usual, place rice in bowl, add spare marinade, top up with water to level its supposed to be, lay chicken on top of rice. Add tin do sweetcorn and/or peas about 10mins from end. They are my lazy can’t be arsed and no one else has volunteered to cook meals. https://www.hirokoliston.com/?paged=7&s=Rice+cooker Has some great ones I want to try.
