My parents died in 2013. My Mum's ancestry was all Swedish Finn, and it turns out my DNA is half Finnish.
This past week I was missing my Mum and feeling vulnerable with the virus and all. I starting thinking about her cooking.
One of her go to recipes was Kalops, which is a braised beef with onions, broth, allspices berries, bay leaves, salt, and pepper. Very simple and to me, yummy. The allspice is traditionally Swedish. I learned to cook using it. I added carrots and celery. Served with boiled potatoes. There are recipes on the Internet.
I have an Instant Pot but decided to go back to basics and use the cast iron Dutch Oven I inherited from my grandparents. About 3 hours in a medium oven. Served with lingonberries I get at Ikea.
It was so good, the meat melt in your mouth. And so comforting. And made me treasure the memory of my Mom.
