Tried making some almond syrup... Now have two cups with of chopped up almonds that have sat in a sugar syrup for several hours. What could I do with them?

Put a bit on ice cream? Struggling to think of much else! Think it would be too wet to make brittle.

Use them in a Nigella Chocolate Olive Oil cake - you can add normal flour to make up the amount needed if you don't have enough almonds and reduce the sugar. Loads of other cake recipes with almonds too.

Add to overnight oats for breakfasts?

Ooh a brittle type thing yes. Could put in the dehydrator perhaps. Kids would go for that, with ice cream of course
