Oh creamy mushroom sauce sounds good

Risotto. Butternut risotto with left over roast chicken is a big favourite around here. Often served with tenderstem broccoli too.

Stir fry; fry up with peppers, onions, mushrooms and use as wrap filling; mix with cooked leeks in a white sauce, put in a baking dish, top with mashed potato and optionally grated cheese/breadcrumbs and bake - bit like a shepherds' pie (assuming you meant pastry pies when you said no pies, apologies if not)

Oh and mix with tomato sauce; use instead of ragu to make a lasagne or a tin of kidney beans and chilli powder to make schicken chilli

Enchiladas

Chicken, chorizo and butter bean stew. Just fry off some onion, garlic and a little bit of chorizo. Add chopped tomatoes, a tin of butter beans and a little bit of chicken stock and simmer for 10 minutes or so, then add the leftover chicken at the end to heat through.

Chicken chasseur with mash or rice.

This Chicken, chive and mustard gratin is epic. Lovely, proper, warming, winter fodder!

Thanks for all the ideas, I have stored them for next time (we eat toast chicken a lot!)

But today we went with this and it was DELICIOUS. I used normal chillies and substituted sake for vodka

I always buy the archetypal MN chicken which does roast on Sunday, risotto on Monday, pasta salad for lunch on Tuesday and chicken noodle salad for lunch on Wednesday. Think I might also look at some of the recipes on here as could do with some inspiration.
