How to prep root veg few hours in advance

I’ve got two babies so wanted to prepare parsnip potato carrot and swede few hours before cooking. I have put them all chopped up together in a Tupperware soaked in water left out on the counter. I don’t know if this is right thing to do please help?

That's what I do every christmas the night before with big amounts of veg. It's always been fine x

Yes, that’s fine. Many people leave them in water overnight when prepping the Christmas dinner!

I used to do batches and freeze them in weaning pots or ice cube trays, saves having to do it every day.

I put them in the pan I’m going to cook them in and cover with water and leave on the hob. Less washing up that way.
