Apple cake

Any tried and tested recipes to use up 2 apples??? Ideally 'spiced' eg cinnamon/ allspice....

Rachel Allen's Dutch Apple Cake is delicious. I follow the recipe from one of her books, but you can almost certainly find it online too.

My mother was a wonderful mother but a crap cook but she used to make apple tray bake a lot, which was lovely. Given the fact she hated cooking, i suspect it was a 4/4/2 sponge with chopped apples tossed in cinnamon folded through.

Mary Berry's apple and cinnamon cake is fab! It has a layer of grated apples in the middle.

We do it in a small round tin, so its dense and pudding-y and serve hot with ice cream
