Leftover Xmas mincemeat recipes?

Hi all - in a fit of eagerness I made a load of mincemeat this Xmas, it was really nice but I can’t face more mince pies, also seems all wrong in January. Can anyone suggest any yummy recipes to use it up? Thank you !

You could mix it through stewed apples and have on porridge.

Add to vanilla ice cream and then refreeze...add extra pastry for proper mince pie ice cream!

I make mince meal pinwheels with puff. So simple, place sheet of puff, on some Demerara and apply slight pressure so sugar goes into pastry, spread the unsugared side with mincemeat (leave a border round the edge), roll up like a Swiss roll, slice into rounds and lay on silicon sheet. Apply light egg wash and bake.

You can generally use it wherever you would use raisins or sultanas. I’ve even seen hot cross bun recipes that have mincemeat in them.

Have tried both recipes and both delicious!

They went down very well with friends (picnics. In the park were allowed back then, Tier 2). It was also an incredibly easy cake to make.
