Vegetarian recipe ideas

Didn’t know quite how to word the title, sorry.
I am vegetarian, my DH isn’t.
I am basically looking for recipes so I can make a vegetarian equivalent to go alongside his ‘meat and two veg’ type meals.
I don’t like Quorn but can eat Soya.
Things I buy from the supermarket are Sausages, nut or veg burgers. I also secretly admit to liking the tomato and mozzarella pancakes. I am looking for recipes so I can make my own version of things like this.
Anyone got any tried and trusted recipes? Or point me to a good website?
Very fussy eater here with texture issues, so rice is a definite no-no.

There's a really good recipe for a veggie lasagna on Pinterest, but would that be ok for your texture issues?

For meat and 2 veg equivalent things like
Stuffed mushrooms, peppers or butternut squash
Grilled haloumi
If use use ready rolled puff, individual tarts are really easy, there’s no end to toppings.
Fritata

Veggie equivalents of meat based meals
Stir fries, same veg, sauce and noodles, add cashews or peanuts to yours and chicken or beef to his.
Cottage pie works well, same veg bases in both but sub the beef mince for lentils and chopped mushrooms in yours. Top with the same mash.
Similar with chilli but sub the mince in yours for mixed beans and additional peppers.
Most pasta sauces can have meat added at the end.

Is happy to eat veggie dishes too?

Sometimes I just do a big mushroom. Use butter in a saucepan, get the pan and butter really hot, put the mushrooms in and stir them about a bit. Add salt and pepper Then put the lid on the pan and turn down low for about 10 mins. Then take the lid off and whack up the heat and all the liquid that has come out hydrogenates and it's bloody delicious.

Omelette

get onions, nuts, and tasty brown stuff like miso paste and tomato puree, mushrooms, whatever you fancy really, and whizz it in the blender. I make it really smooth. Make into balls or rissoles and deep fry - or sort of deep shallow fry. Not terribly healthy admittedly. The good thing about being veggie is you can taste as you go when raw and if it tastes nice then it will be cooked!

Falafel is good and I like this recipe because it's easy. www.delish.com/uk/cooking/recipes/a29082528/easy-homemade-falafel-recipe/ Most recipes say you CANNOT use tinned chickpeas but you can. Maybe it's less authentic but it's still nice.

I've just noticed a frying theme with my recipes Hmm. Sometimes I get puff pastry and sort of put stuff on it. Hugh Fearnley W's book veg has some good ideas for that.

Aubergine stack works well with potatoes and veg too. www.goodto.com/recipes/roasted-aubergine-stack this one looks good but I haven't tried it as I tend to make stuff up as I go along.

Some great ideas.
Particularly like the vegan sausage plait and the lentil meatballs, will give those a go.
DH is happy to eat veggie, so will give the cottage pie a try too.
