Glut of parsnips-no soup please!

My veg box this week seems to have a double portion of parsnips. The freezer already has a load of soup and I’ve eaten my fill of roasted parsnips over Christmas.

Any suggestions? Must be veggie or adaptable.

I’ve actually made almost that bread with potato and goats cheese, and also sweet potato and feta. I didn’t realise there was also a parsnip version. That’s a definite.

I really like the idea of parsnip risotto too-
I often make a beetroot one. Thinking it could be similar.

And crisps. Gosh I love crisps.

This isn't a serious suggestion Grin but during WW2 when bananas were unobtainable I believe some people cooked and mashed parsnips and flavoured it with banana essence as a sad attempt at making mashed bananas - for sandwiches? I can't imagine it was very nice.

I've got some very sad old parsnips in the vegetable drawer of the fridge and if they are still edible I'm going to make that roulade this weekend (30+ years since I first looked at the recipe and thought I must try that some time!).

I always make Parmesan roast parsnips from Delia Smith's Christmas book for Christmas dinner. After parboiling and coating in flour/Parmesan they freeze very well and can be roasted in hot oil straight from the freezer.

Hmm, when in a similar situation recently I made a parsnip cake, and felt both frugal and adventurous (also: smug).

It tasted very parsnippy. It really isn’t one of those ones where you say to people “you’ll NEVER guess what this is made of”. The family all said immediately - “this tastes of parsnips”. And not in a good way.

We like curried parsnip pie.
I adapt this recipe with whatever veg I have and add a handful of grated cheese.
