Family weeknight pudding

Obviously things aren’t nice at the moment and I’m looking for some comfort
I suddenly remembered when my nan used to make a pudding like a crumble, and that would do everyone for a few nights after dinner/tea. There’s something really cosy about her bringing out a homemade cake and there being a set dessert for after the evening meal, I feel really nostalgic for it and want to do it for my family

It would be weeknight so I don’t want anything really indulgent (triple chocolate brownies would be my usual go to!) and DH hates crumble

What would you make?

Apple pie with custard or vanilla ice cream

Chocolate fudge cake heat on micro with ice cream

Bananas and custard with grated chocolate

Apple/rhubarb pie.
Syrup sponge and custard
Rice pudding
Bread & butter pudding

We only have pudding on a Sunday, but they are our nostalgic family favourites.

  • Cheesecake (I like the type you chill, in coffee, Oreo or lemon), can be done in little pots/jars and covered with cling film if you want it for 2-3 nights
  • Ice cream (we usually have 2+ flavours in the freezer, and top them with nuts or sprinkles)

Pears or apples under a ginger sponge with custard.

Fruit cobbler. Bread and butter pudding.

Cinnamon and raisin rice pudding.

Cherry pie made with ready roll puff pasty and black cherry pie filling. And custard or vanilla ice cream.

Sticky toffee pudding. Syrup suet pudding. Pineapple upside down cake. All with custard.

In fact just anything. With custard.

Apple crumble, I make the topping in the food processor and freeze it. Same with pears and apples when they get a bit old in the fruit bowl.

I made shortbread and it went wrong so we have that frozen too. We bake it in small ramekins and serve topped with ice cream.

OH makes meringue nests, strawberries, sorbet and squirty cream.

Lots of times DC have apple juice frozen in silicon molds. No matter the weather.

I would only bother at the weekend. OH is used to pudding after every meal.

I made a lemon meringue pie the other day. Easier than I remembered (but bought the pastry case) - Delia's recipe www.deliaonline.com/recipes/books/delias-complete-how-to-cook/traditional-lemon-meringue-pie
I used an old recipe which needed only 2 eggs, made a good size pie.

I’m a huge pudding person Grin
Make them all from scratch and even make super low sugar versions for my baby DS.
I agree there’s something so comforting about them!

So I would recommend:

Apple/fruit pie (could also do a fruit lattice if prefer less pastry)
Rice pudding (super easy and yummy just throw it all in the oven)
Eve’s pudding
Syrup sponge pudding
Chocolate concrete
Orange shortcake
Coconut and jam sponge
Chocolate sponge with Choc sauce

Lemon curry pud/lemon surprise pud is our go to. Both Jamie and Delia have recipes. Always eaten in one sitting though it keeps perfectly well!

My favourite used to be strawberry angel delight with a bashed up flake sprinkled on the top of it. A very rare but very welcome treat!

Jam or syrup sponge, 7 and a half minutes in the microwave! Serve with custard or ice cream. Amazing
