Special beef fillet recipe

I've got a lovely centre cut piece of beef fillet I'd like to cook nicely for NYE dinner with OH, just looking for a bit of inspiration of something different i could do.

Ideally I'd like to keep it whole, and not marinaded and BBQ'd or Wellington as these would be my go to, and I'd like to try something a bit different. We have a well stocked pantry and like pretty much all cuisines! Any fabulous ideas?

I did a herb crusted fillet with bordelaise sauce for Christmas. It was delicious.

This red. Wine jus is absolutely gorgeous. Subtle tones of garlic and cranberry give it real depth of flavour. I’m not a sauce person but this one is something else!
