I had the most delicious swede and carrot in a restaurant, how did they do it?

It was mashed together but I guess it must have had something else in it as well because it was so creamy and certaintly doesnt taste like mine mashed together.

Anyone know how they may have done it?

And possibly roasted the swede and carrots before mashing to intensify the falvour. though tbh the fat/salt is probably the answer. Also nutmeg goes v. well with mashed swede
