Meal Prepping

Assuming the kids go back to school next week (and even if they don't!) I need to prepare some weeknight family dinners to make life easier. The kind of thing which can be assembled and frozen and then can go into the oven. Here are 3 things I do already:

  • lasagne
  • cottage pie
  • fish pie

we can't live off this forever, what else can I make? I have those glass dishes with plastic lids which work well from the freezer and into the oven.

Sausage casserole
Chicken tagine
Chilli (meat or veg) Love chilli because you by mixing up the sides, rice, in tacos, on jacket potatoes, with tortilla chips etc you feel like you are eating different things.
Numerous curries
Chicken cacciatore
Root veg casserole
Fish cakes
Falafel

My kids love all these which can be made in advance and frozen:
Chicken casserole
Bouef bourgignon
Ragu
Fish pie
Slow roasted and then slow cooked hidden veg sauce - great for hiding in everything!
Muffins for packed lunches
Chicken curry

I make burger patties and freeze them (also freeze burger rolls so I know I have what I need.

Chili
Spag Bol
Meatballs
Mac and cheese
Curries
Pasta sauces
I also par boil potatoes in a variety of formats (chips, cubes, toast) so I can add them to a quick meal

When I’m portioning ready to freeze I also use some of the individual take away meal size tubs for nights not everyone is home or eating at the same time. That way there are individual meals ready if needed.

I have prepared some fishcakes this eve with a couple of salmon fillets and some mashed potato, we'll eat some tomorrow eve and freeze the rest - quite easy if you've got leftover mashed potato.
