Can I make the cauliflower cheese the day before?

I’ve got the time and inclination to make it now, ready for tomorrow.
Will I cook completely and then re heat covered in foil?

I wouldn’t. It’s one thing I prefer fresh.

Definitely. Make the sauce and Cook the cauliflower (though slightly undercooked). Pour sauce on top and leave in fridge. Add the grated cheese/ breadcrumbs before you cook the whole thing tomorrow.

I would make it, let it cool, grate the cheese on top and put it in the fridge and cook/ warm through tomorrow.

I have broccoli, leek and cauliflower cheese cooling in the kitchen and will grate cheese on top tomorrow before sticking it back in the oven. It will be chilled overnight. I've braised the cabbage and par boiled the potatoes and parsnips too.

Definitely, flavours better the day after BUT I don’t cook so far as for the cauli to be soft, or else it would probably be a bit too mushy when cooked through (just my preference)

This is the job I always do the day before, it creates a fair bit of washing up, I like it done out of the way. Mines in the fridge assembled with the cheese on top ready to go in the oven tomorrow.

I’m feeling so chuffed at my ready to go cauliflower cheese that I might even prep the pots and parsnips.
But wait, I’m in tier 4!
I’ve got bugger all to do tomorrow except cook dinner and as it’s only us 4, it doesn’t matter what time it’s ready.
I might as well save the peeling for tomorrow Sad

I'm going to do mine in a min. I was planning on keeping the sauce and cauliflower separate in the fridge as I read somewhere it's better to do this, any in agreement or challenges to this‽ I'd rather stick it all in a tin ready for tomorrow.

If you parboil the parsnips now, do you need to coat them in anything or keep in cold water overnight? I googled but everything I read was geared up for those freezing immediately after.

I am feeling suitably smug now. Cauliflower cheese done after you all inspired me. Just waiting for it to cool before popping some grated cheese on top and putting it in the fridge. Will stuff the turkey a bit later then I will leave the rest for tomorrow. Merry Christmas to you all!

@DieCryHate bit late now I know, but in case it helps for next year...

I cooked the cauliflower for a few mins so was still undercooked, made the cheese sauce, chucked it on top, threw some grated cheese on top of that and popped it in the fridge overnight, to heat through the next day.

Literally couldn’t tell the difference between that and when made completely fresh.
