I've been gifted an industrial quantity of mozzarella and pesto from a friend who works in catering. I love both but no idea of what to do with them on this scale. Anyone have any suggestions of ways to use them up? Maybe something I can freeze?

Is it mozzarella slices or balls. And is it fresh pesto?

You can freeze mozzarella. Pesto should be ok in the fridge covered in oil. www.greedygourmet.com/freezing-food/freeze-mozzarella-cheese/

You could make pizzas or toastier and freeze.

You could make a pesto/veg lasagna, or two, and freeze portions for a bunch of easy, ready to eat meals.

Mozzarella and tomato slices drizzled with balsamic vinegar and eaten with crunchy bread is lovely . I think it's called calpraise ? Salad
