Sharing my mushroom 'caviar' recipe.

Mushrooms (a punnets worth, any type, depending on your taste).
Drop of oil
Quarter of a large onion or one shallot
One clove garlic (or more, again depending on taste)
Salt and pepper.
Heat oil in a frying pan
Chop mushrooms, onion or shallot and add to the pan. Crush garlic into the pan. Cook for five minutes until onion/shallot is slightly cooked.

Reduce heat, and season. Cook gently until mushrooms give up all their liquid. Stir and cook until the mixture is brown and dry.

Allow to cool.
Blend until you have a chunky paste.
I'm addicted with crackers or similar .. Low cal, too.

For a variation add black olives at the blending stage.

Just realised I forgot to say crush the garlic and add when you add the rest of the ingredients Grin I'm rubbish.

Very similar to mushroom duxelle. Very delicious. One of my favourite things I used to buy but can't seem to get very often any more was mushroom pate. Lots of garlic and delicious on toast. Or just by the spoonful Grin

I'm rubbish at recipes for others. I'm too 'bit of this bit of that ' instead of measuring properly! Hope it turns out well for anyone who makes it.
I'm going to try the walnut and mushroom one too. I wonder if it would work with chestnuts...
