I am a competent cook, but as DH doesn't like mushrooms I rarely cook them. DD has asked for them as a Christmas day starter. Do I just fry in garlic butter and add cream,?

I normally use cream cheese or cream fraiche depending what I have in the fridge at the time, similar to these two recipes www.diabetes.co.uk/recipes/mushroom-thyme-and-cheese-vol-au-vents.html and www.jamieoliver.com/recipes/vegetables-recipes/creamy-mushroom-vol-au-vents/

This is a more extravagant recipe with cream (and brandy!) www.foodandhome.co.za/recipes/creamy-mushroom-and-thyme-vol-au-vents

I did some as a side dish with steak last week. Having noticed that on every cooking programme, when making mushroom sauce, they add shallots or onions, I did the same. So basically, very finely chopped onion (not a lot). Saute until soft etc. Then up temperature and add garlic, butter and mushrooms. Then once cooked swirl in some cream. I added a squeeze of lemon and some salt and pepper. Would have been delicious served on toast.

I had a flatmate who used to add brandy before the cream. I'm not quite sure if there were other elements to his technique. But it was delicious.
