I'm on starters (hopefully!) for Xmas day so doing smoked salmon parcels stuffed with a smoked mackerel pate and a hot smoked salmon pate / mousse.
Prawn cocktail in a little gem leaf and then salad garnish and homemade malted brown bread.
I want to make as much ahead as I can without compromising quality!!
I'm definitely doing bread ahead in case it doesn't rise! Too risky. So will have that sliced, frozen, defrosting in the car as we head over.
Can I make the parcels ahead?? Or at least the pate??
