Biscuits to make with biscuit cutters

Friend gave me some biscuit cutters, so now the kids want to make biscuits that you cut out. Any recipe recommendations? The simpler the better as it's with the kids please

Both yummy but gingerbread ones nicest with icing, we like the butter biscuits with chocolate drizzled over them (& kids like to add sprinkles!)

Shortbread

Short bread is very easy. 125g butter (unsalted), 60g caster sugar, 180g plain flour. Very easy mix butter and sugar and sift in flour and mix. Squeeze together in a ball. Roll out quite thick then use cutter to make shapes. Pre heat oven. Bake at 120c for 30 mins if large shapes or 25 if small shapes. Put on non stick bake tray. You can ice them when cold. If you want chocolate shortbread substitute 20g flour for 20g chocolate powder.
