Hi I'm new here so hope this is the right place. What is the best recipe you know for red cabbage please?

I finely chop mine, along with a red onion. Then braise it in apple juice in a heavy bottomed pan (stops it burning). I also add seasoning, some cider vinegar and fennel seed at this point. Cook for half an hour or so.

Nigella’s one in her feast book with half the sugar is really nice.

For a proper recipie, I'm not sure though! I always do it that way and it's always lovely.

Thank you for the pointers I had no idea there were so many variations out there until I'd decided to make it this year

I always do this one (as not keen on onion in it red or otherwise) and would thoroughly recommend.

I use this one.
It is better after w few days so I make it in advance. And it makes loads so we eat it with every meal over Xmas

Olive oil in the pan. Finely sliced red cabbage, fresh cracked black pepper, more olive oil on top, fry off. You can also mix in leeks.

Another vote for Delia. If it's for Christmas dinner, I prepare it the day before and gently reheat it on the hob on the day to free up space in the oven.
Cold leftovers are also nice with baked ham on Boxing day.

Definitely Delia's! Make it a day or two before for flavours to meld and develop. Yummy!

DH roasts red cabbage. It is awesome, so much nicer than braised and very addictive. Slice it up, drizzle over some oil, bit of seasoning then mix it all up, spread out on a baking tray in the oven and roast at 200C for 30 mins. Sooooooo good.

dallafela · 17/12/2020 17:25

My favourite is a finely sliced red cabbage, a grated large bramley apple, 100ml of apple juice, tablespoon of demerara sugar, tablespoon of fennel seeds, plenty of salt and pepper all mixed together then put in a roasting dish. Dot the top with plenty of pieces of butter and roast for 90-120 minutes until softened. I cover with foil for the first hour.

It's very simple but really delicious and will always be my favourite christmas side dish. It's just as good without the fennel seeds too.
