Vegetarian canapés

Can anyone please suggest some tried and tested vegetarian canapés for Christmas? I'll be working until Christmas Eve so will need to prepare them with minimal time. Cook aren't that inspiring this year, although I have a few from Sainsbury's in the freezer for insurance purposes.

Crostini with goats cheese slightly melted (use a blow torch) with cranberry

I always vote for quiche, I love quiche Grin

I would get M&S or Waitrose Tapas selections.
Or Christmas Canapes - they look very nice.

Lobsterquadrille2 · 14/12/2020 17:26

We don't have a Waitrose - I didn't think of M&S! I also don't have a blowtorch - probably a good thing - quiche sounds good though. Thank you.

If you’ve got a Sainsbury’s nearby, try and get some of this butternut pate www.sainsburys.co.uk/gol-ui/Product/vegroot-vegetable-pâté-butternut-200g The same company does an aubergine one too. I spread the butternut one onto oat cakes and top with crumbled feta

Crostini with tapenade food52.com/recipes/5116-burrata-and-olive-tapenade-crostini - I don’t make the tapenade myself though!

Greek salad boats.
Use chicory leaves as the boats. Crumble in feta, an olive, some chopped red onion and drizzle with a Greek dressing.

French stick slices topped with creamy mushrooms. Fry off onion and mushrooms. When the mushrooms release their liquid stir in a spoon of flour. Add salt, pepper and herbs to taste. Finish with cream, stirring until you get the consistency you want.

Diced manchego drizzled in honey.

Buy small peppers, fry off, almost scorching them. Place in the erving dish and sprinkle big flakes of salt over.

Good variety in M&S this year - I noticed when I was in our local one yesterday.

Cut naan breads into canapé size pieces and heat on a baking tray. Heat chickpea Dhal (obviously you can make your own but Sainsbury’s and M&S will both do a very good job for you &can be heated in microwave!)
Puta tiny dollop of mango chutney on each piece of naan, then a teaspoon of the chickpeas then top with a drizzle of natural yoghurt and a coriander leaf.

I small plain cracker (ritz sized but less flavoured) more like a water biscuit, slice of pear, dollop of onion chutney and piece of Stilton.

Make Brie and cranberry sandwiches, butter outside then lightly egg wash. Cut crusts off and then each sandwich into 9. Bake in oven. Mini toasties

Cheese an tomato pizza - use a round cutter to make min pizza.

Filo parcels made with - cream cheese and mushroom (cook the mushroom first) or brie with mango chutney.

Buy a pack of frozen vol au vent cases and do your own fillings

Make a cheese sauce (or buy ready made) and add finely chopped sauteed mushrooms or onions. Curried egg mayo is good, as is guacamole (homemade is best)

Devilled eggs
Quail eggs, hard boiled, served with celery salt or mayonnaise to dip
Buy ready made gazpacho, serve in shot glasses
Home made cheese& mustard twists, make with ready made puff pastry
