How to make the best sausage rolls? and veggie version

I have some puff pastry, and some sausages.! What else do I need to make tasty sausage rolls? I'm going to have a practice run this week to get them right before I make for Christmas buffet.
Shall I add bacon/stuffing/chutney? Anything to jazz them up a bit. They always come out just okay and not very pretty usually.

Also interested in maybe a cheese and onion roll one? And a vegan one. Maybe defrost some veggie sausages to use in place of sausagemeat?

I spoon some mango chutney on top of the sausagemeat and then sprinkle along some feta cheese. Very tasty.

Fennel seed, smoked paprika and parsley in the sausage meat. Serve with a tomato, lemon and chilli dipping sauce

These sound delicious! I especially like the mango chutney idea as I never would have thought of that

If you can get hold of sobrasada just add some to the sausage meat and if you want to go all out make a tiger bread glaze to go on the top.

Good Lincolnshire sausages, English mustard and caramelised onions (must be cold when you add them to the mix). My DW uses all butter puff pastry and they only take around 30 minutes on a tray @180C.

There's a Dan Lepard (I think) recipe where he rolls stilton into the puff pastry.

Delia's recipe for Etty's sausage rolls is really nice. Loads of sage.

I like to sprinkle sesame seeds, fennel seeds and nigella seeds on top. Probably a bit ott but I like it!

Dry stuffing? Or mixed with water? And in what quantities of stuffing to meat?
