Vegetarian centrepiece dishes to go alongside roasts

I am looking for two veggie main course dishes, one to serve alongside rib of beef, so suitable to go with Yorkshire’s, roast potato etc, the other to go alongside the turkey, so to go with stuffing, red cabbage, (veg) pigs in blankets etc.

Nut roast is ‘too much like stuffing’ for the turkey dinner, apparently. But could be ok with the Yorkshires etc.

Something lovely and interesting. For 4.

Any ideas? Thank you!

Yes I’m looking for veggie dishes too, but I dont like pastry, and not Keene on nut roast either!

There are plenty of Wellington and pithivier type recipes about. Cauliflower cheese pithivier
Beetroot and goats cheese open tart
Waitrose has a festive filo swirl

I am planning a pumpkin stuffed with chestnut rice ( recipe in this weeks Sunday times mag)

Or maybe just the filling could be pre-made and transported. And then assembled and baked in situ.

I've done stuffed butternut - with spinach and ricotta and topped with feta - as main course/side for vegetarians at Christmas in the past. And my sister did stuffed mushrooms one year although I think she bought them pre made and just heated them in the oven.

I've just watched the lovely lively youth from Riverford's demonstrating a Butternut Squash Wellington type thing on Insta. Looked very impressive, and, as I love pastry I may use that instead of the rice stuffed roasted pumpkin mentioned above, from the Sunday Times, which was my initial choice.

(I recklessly bought a box of a dozen squashes from Riverford a few weeks ago. They're so pretty! And kind of comfort me with the certainty that I won't starve over the new year. As long as Brexit doesn't deprive us of electricity ...)

Goat's cheese is a no-no. What would be a good alternative? I am not sure what the Essential Goats Cheese listed is like - but maybe ricotta like? And add something a bit more flavoured than ricotta to boost it a bit?
